the grind. banana bread

This is a great banana bread recipe modified a bit from Elana’s Pantry I made it for my kids with chocolate chips. They had no idea it was paleo. I promise you won’t even miss the gluten!

3 bananas (about 1 ½ cups) mashed
3 eggs
1 tablespoon vanilla extract
1 tablespoon honey
¼ cup kerry gold unsalted butter (at room temp) or coconut oil
2 cups blanched almond flour
½ teaspoon salt
1 teaspoon baking soda
Place bananas, eggs, vanilla, honey and butter in a food processor
Pulse ingredients together
Pulse in almond flour, salt and baking soda
Scoop batter into a greased 7.5 x 3.5 loaf pan
Bake at 350° for 55-65 minutes
Remove from oven and allow to cool

These also work well as mini muffins, but decrease the cook time to 15 minutes.
